On one dedicated half day during our immersive cooking vacation in Puglia, we dive deep into Puglia’s olive oil culture with a guided tasting.

Our host, Jolanda, a professional olive oil expert who returned from Milan to manage her family’s olive estate, is our passionate and knowledgeable guide.

The Puglia olive oil tasting experience takes place outdoors, underneath the shade of a carob tree. 

There is no noise, no rush, just a profound sense of connection to the earth and a beautiful moment rooted in authenticity.

Jolanda begins with an introduction to two of her family’s estate blends. Nonno Paolo, a light and delicate oil, and Nonna Maria, an oil with bold and peppery notes. 

Both olive oils are made from a mix of Leccino, Ogliarola, Cellina, and Nociara native olives. They’re harvested at different stages of ripeness and cold-pressed on-site.

The tasting begins with each olive oil sampled on its own with no bread or distractions. The oil is served in a small, cobalt blue glass to conceal the color and focus our senses on the aroma and flavor. 

Jolanda guided us through the process like a ritual of warming the glass in our hands, inhaling deeply, and letting the oil coat our palates slowly.

Only after savoring each oil on its own do we move on to tasting each one with food. 

The oil was paired with traditional bread made with ancient grains, a savory olive pâté, and toasted almonds from their own groves.

In addition, we also sample their infused olive oils flavored with garlic, basil, pepper, and sage. These unique oils, bold and aromatic, take our senses on a flavorful journey.  

Accompanying the experience are generous servings of beautiful local rosé wine.

The experience ends with a spoonful of local floral honey and a few locally grown almonds. Simple and honest flavors that linger. This was no ordinary olive oil tour in Italy. It was a deeply personal Puglia olive oil farm visit that offers a front-row seat to a culture steeped in care, flavor, and craftsmanship.

“Olive oil is not like wine”

As we savored some of the best olive oil in Puglia, the conversation naturally shifted to how to preserve its quality at home.

Jolanda shared some of her best  tips for preserving extra virgin olive oil at home:

“Olive oil is not like wine,” she told us. “It doesn’t get better with age. Freshness is everything.”

  • Always store the olive oil in stainless steel or dark glass containers. This helps preserve the freshness, flavor, and nutritional quality of the oil
  • Keep olive oil in a cool, dark place away from heat and light. Exposure to heat and light accelerates oxidation causing it to lose its flavor and nutritional quality.
  • And, Yoland’s most important tip – only buy olive oil you’ll use in a year. Unlike wine, Yolanda added, “Olive oil does not improve with age.” This means paying close attention to the harvest date, which allows you to choose the freshest oil, best enjoyed when its flavor and health benefits are at their peak.
